Currently, you can find them everywhere, and we definitely love them, but Fajitas became a thing thanks to cowboys…and South Texas.

Fajitas means strips of meat and it was a tradition to serve them to cowboys, next to flour tortillas, in South Texas and Northern Mexico. The flavored steak, covered in spices quickly gain popularity. Soon, chefs used different ingredients along with meat strips, like grated cheese, vegetables and a mix of dips, like salsa and guacamole.

This dish didn’t remain just a 70s staple food. It was extremely popular back in the 80s and 90s and people continue to love it.
